Food has the ability to affect our bodies and minds in profound ways. It can influence how we feel, think, sleep, and function every day. The outcome of this course is for the learner to describe how food affects one's mood, the types of nutrients that can improve or enhance mental health, types of eating disorders, and how to incorporate mindful eating as a way of supporting positive mental health.

  2. Identify the role of inflammation in physical and mental health.
  3. Discuss the relationship between vitamins, herbs, and mood.
  4. Explain food addictions, food cravings, the role of diet in premenstrual syndrome, and how food affects sleep.
  5. Describe the relationship between food and love.
  6. Explain the major eating disorders—anorexia nervosa, bulimia nervosa, and binge-eating disorder.
  7. Explain the relationship between adequate water intake and mood.
  8. Identify elements of mindful eating that enhance mental health.
